You do not have to maintain the dates
Due dates come from the vehicle data rather than from somebody typing them into a spreadsheet. Refresh a vehicle record and the date is current.
Timing
Far enough ahead that people can plan and close enough that they have not booked elsewhere. Two to three weeks suits most, and a second nudge in the final week catches the ones who meant to ring.
Keep your vehicle records clean
Reminders are only as good as the records behind them. Mark vehicles sold when they leave your customers and transfer them when they change hands, or you are reminding people about cars they no longer own.

Where does the MOT date come from?
From the vehicle lookup rather than from you. Refresh a record if you want to be sure it is current.
Do reminders cost anything?
Email is included. Text messages have a per-message cost, so check Settings, then Messaging.
Can a customer opt out?
Yes, and it is honoured. An MOT reminder is a service message about their vehicle, but somebody who asks not to be contacted should not be.
